Lamb's Ear (Stachys byzantina) is perennial herb related to mint. It has soft silvery fuzzy leaves and purple flowers reminiscent of mint. In South America, the leaves are eaten breaded and fried as a dish called peixinho da horta ("little garden fish"). Over time it grows into a dense clump of silver leaves and purple flowers, and emanates a pleasant demeanor.
These Lamb's Ear are sold as dormant second-year root crowns with a bit of stalk attached.
